Let’s Talk Oatmeal in Food, Recipes on 03/17/16Pears & Walnuts & Almond Butta Happy Friday eve to all my favorite little Internet friends! I hope your week has been filled with sunshine and sparkles. I’m just going to come out and say that mine definitely has been. Although Spring is finally making a consistent-ish appearance and I just had the most relaxing spring break ever, I believe I owe all of my ~happy vibes~ to oatmeal. The pound and pounds of oatmeal I have been consuming. Oatmeal that makes me want to go to sleep every night so morning can come faster and I can eat it. That’s, right. Oatmeal. A breakfast item I may or may not be in a committed relationship with. I was just procrastinating schoolwork as usual and scrolling through every single photo on my phone when I realized just how much oatmeal I eat on the reg. And the fact that I apparently always take pictures of it. I got more pictures of oatmeal on my phone that your average gal… I personally am lovin’ on carbs all day erreday but I especially love them in the AM. I am what you might describe as a chronically hungry individual, and need a ton of food energy to get me through the morning. Rolled oats are dope because they’re rich in minerals, high in manganese (hello healthy hair) and iron (hello healthy nails). Another little known fact is that they’re also full of anti-aging selenium. Gotta love it. Oats are also dope because you can use them to make sweet or savory meals and have the time of your life putting fun toppings on them. I like using Bob Mill’s Gluten Free Rolled Oats. Here are a couple of my favorite go-to combos. Seriously, I’ll send out Snapchat pictures to confess my love over these bad boys to like 12 different people. Mango Coconut Chia Oatmeal Ingredients: 1/3 cup rolled oats 1 cup of almond milk 1/2 cup frozen or fresh mango 1 tbsp coconut oil 1 tbsp chia seeds 1/2 tsp vanilla extract 1/4 tsp ground ginger Toppings: Shredded coconut, diced walnuts, cashew butter, cinnamon Grown-Up PB & J Oatmeal Ingredients: 1/3 cup rolled oats 1 cup almond milk 1/2 cup frozen or fresh mixed berries 1/2 tsp vanilla extract 1/4 tsp cinnamon 1 tbsp peanut butter Toppings: PB2 powdered peanut butter, dollop of jam, sliced almonds, cacao nibs, drizzle of maple syrup Apple Pie Oatmeal Ingredients: 1/3 cup rolled oats 1 cup almond milk 3/4 small apple, diced 1 tbsp chia seeds 1 tbsp coconut oil 1/2 tsp pumpkin pie spice Toppings: remaining diced apple, chopped pecans, drizzle of almond butter, cinnamon Hope you love these as much as I do, they’re pretty friggin’ magical.
